Why You Need Eat at Talde Brooklyn
Originally from Chicago, Dale Talde was raised by first-generation Filipino immigrants and spent his childhood cooking alongside his mother. His interest in cuisine led him to the Culinary Institute of America, where he graduated in 1998. After working at a number of acclaimed restaurants, Dale moved to New York City in 2005 and began cooking at Morimoto restaurant under Iron Chef Masaharu Morimoto. He then competed on the award-winning cooking show Top Chef: Chicago in 2008 and Top Chef All-Stars in 2010. Two years later, he partnered with restaurateurs David Massoni and John Bush and opened his very own restaurant in Park Slope. Today, Talde feeds the masses with the daring and eclectic flavors he loves.
The dishes at Talde Brooklyn offer a contemporary twist on classic Asian favorites and utilize fresh local ingredients. Signatures dishes include Vietnamese garlic shrimp, Korean fried chicken, and crispy oyster & bacon pad Thai. Be sure to save room for dessert and indulge with Dale’s version of Halo-Halo, a Filipino shaved ice sundae made with condensed milk, coconut, pineapple, lemongrass, and tapioca that’s topped with Cap’n Crunch. The restaurant also has an extensive wine list as well as a variety of seasonally-inspired cocktails.
With an impressive collection of Asian antiques and beautiful mahogany wood carvings, Talde offers a casual yet elevated dining experience. In addition to the 65-seat dining area, guests are welcome to enjoy a 6-seat chef’s counter where they can watch and interact with Chef Talde in the open kitchen. The restaurant’s unique ambiance and delicious menu have resulted in critical acclaim from Food & Wine, New York Magazine and Brooklyn Magazine, as well as multiple 4-star and 3-star reviews.
